Roasted Red Potatoes & Parmesan Garlic Cabbage w/ Smoked Sausage

Roasted Red Potatoes & Onions
A quick delicious southern favorite in our home.
  • 3lbs Red Potatoes (Washed and Dried)
  • 2-3 tbsp to coat Olive Oil
  • 1 Onion,Sliced
  • 1/4 tsp Onion Powder
  • 2 TBSP Beef Bullion Granules (low sodium)
  • 1/4 tsp parsley flakes
  • 1/8 tsp Black Pepper
  • 1/8 tsp Paprika
  • 1/8 tsp Celery Salt
  • To Taste Salt
Preheat oven to 450. (425 for convection) Stir the beef bouillon granules, onion powder, parsley flakes, celery salt, paprika, and black pepper in a bowl. Dice potatoes and slice onion. Place onto cookie sheet or casserole dish.Sprinkle mixture over vegetables and drizzle with olive oil. Toss to coat. Bake for 30-45 min or until tender stirring every 10 minutes. Sprinkle with salt to taste.

Parmesan Garlic Cabbage & Sausage
A quick delicious southern favorite in our home. Super Easy!
  • 1 package Smoked Sausage ( Your Preference)
  • 1/2 Cabbage
  • 3 Tbsp Grated Parmesan Cheese
  • 1-2 Tsp Minced Garlic
  • salt & pepper to taste
Use 2 tbsp water OR one pat of Butter or Oil in pan. (this is only to prevent burning. No Oil is needed. Heat on Med-High.Shred cabbage and Dice sausage. Pour into pan and cover. Stir well Often. It usually takes 5-8 min to become soft. Once cabbage is soft add 1 tbsp of Parmesan as well as the garlic, salt, and pepper.Sprinkle With remaining cheese when ready to serve. Enjoy!

Quick Dinner! Philly Cheesesteak Quesadillas

It's finally football season! That means lots of snacking and late night games here in our home! These are Super Easy, quick and yummy too! They are great for a quick snack or lunch or a full dinner served with corn or roasted potatoes or rice!  I wished I had onion this time because it did lack the flavor we are used to. Also hubs suggested we add our steak seasoning to it next time to bump it up! Try it and let me know how it goes!


Family Favorites | Scrambled Lasagna(freezer meal) & No Bake Cookies + Grass fed beef tips

In my newest vlog, I'm sharing just a few of our family favorites including my "Scrambled Lasagna" which is one of my favorite freezer meals & Chocolate Oatmeal No Bake Cookies that are perfect every time and super quick! I've also included some grass fed beef cooking tips for those of you who may be having trouble cooking it well.  Watch the video then Print the Recipes below!

Scrambled Lasagna
One of my favorite freezer meals and a great quick way to satisfy your lasagna craving quick!
  • 1 lb box Rigatoni Noodles
  • 1 lb Ground beef
  • 1 jar Pasta Sauce
  • 1-2 8 oz bags Shredded Italian Cheese
  • 1 tsp Parsley
  • to taste salt & pepper
  • 16 oz Ricotta Cheese
Preheat oven to 435 & Boil Noodles and Drain - Set aside Meanwhile, Brown hamburger beef & drain if needed. Then add sauce. If using grass fed or low fat meat you may add your sauce into meat before browning.Mix noodles, Ricotta, Parsley, Salt, Pepper and shredded cheese (reserving some for the top) together and pour into a casserole dish.Add meat sauce mixture on top of noodles and top with remaining shredded cheese.Bake for 20 min or until cheese is melted well.

No-Bake Chocolate & Oatmeal Cookies
No fail, perfect every time! For those moments when you are desperately craving something sweet and chocolaty but don’t have a lot of patience. I can tell you that this will solve that craving and warning these are addictive.
  • ½ cup (1 stick) Butter
  • 2 cups granulated sugar
  • ½ cup milk
  • 4 tbsp cocoa powder
  • ½ cup peanut butter
  • 2 tsp vanilla extract
  • 3 cups quick cooking oats
Add the first four ingredients, butter, sugar, milk and coco powder to a 4-quart saucepan.Bring to a rolling boil and let boil for 1 minute. Remove from heat.Stir in the peanut butter and vanilla until smooth, then stir in the oats.Drop by heaping tablespoons onto wax paper-lined baking sheets. Let cool until set.

Take a night off from cooking! Here's an Awesome Olive Garden Deal!

I was super exited to find this deal on HERE.  We opted for a side of grilled chicken and a side of meatballs instead of the cheesecake. We may or may not have eaten the bread sticks on our way home (oops) but if i'm in a city where we have an olive garden i'm definitely doing this deal again! We had an hour drive home but the warm ones kept well and the to-go ones were still cold when we got home. They also gave us plenty of extras (sauce,cheese,mints,utensils) Which was a huge plus! All in all our total with tax was $28.62! Even after we all 5 ate dinner, we have 2 full entrees and a full box of salad to eat for lunch tomorrow! Enjoy!
