Aldi's Holiday Haul | Shopping Hauls

Made a quick trip to Aldi's to grab a few things for some Christmas events we have coming up. I came out with a lot more than intended but I am excited to try out some new things. I also got several items for gifts & just general needs around the holidays!

DIY Transparency Pages | December Daily. DIY. Crafting



Being a frugal Mama, I'm always looking for cheaper ways to do things. So this year's December Daily was no exception. Here's a quick cheap way to make yourself some personalized transparency sheets. The WannaBe™-When I Grow Up I Want to be a Firefighter EBook is part of  an 11 ebook series from The Old Schoolhouse Magazine, which focuses on several popular careers.

So let me tell you a few of my favorite things about this ebook. First off it is jam packed with everything you could or would need. Over 70 pages! It's geared towards the 4-10 year age group but really even adults could use it. My kids are 9,5, and 16 mos and they all had activities to do. Yes,even the little one had his coloring page. I love that it covers every subject. We were able to skip a few of our normal subjects and substitute them with the firefighter themed one. It starts with the history of firemen, the gear they use, different jobs in the department and even has the educational requirements handy as well! It truly does hit on every subject it even includes a great science lesson about robots and a fun project to make your own robotic arm model.

The vocabulary list included was one of my favorites we used it for the writing prompt pages and many of the activities we did. I also loved that they included memory verses and tons of games and activities too! In the very back of the book, there's even a list of additional resources full of books and websites you can use to further customize your learning experience.  The kids loved pretending like building inspectors and the bucket brigade game the best! All in all, this was such a fun and easy ready to go lesson that allows you to just focus on the subject for whatever time period you choose & we cannot wait to start on another.

Here's a few deals I snagged last week at Target! Fall/Halloween Clearance finds,Dollar spot, and a few other things! My friend Stephanie over at The House On Hillbrook has got me addicted to Scrapbooking. I've dabbled in it over the years but I'm so in love with all the new things and LOVE the idea of having my babies memories documented and easily accessed. Stuffed White Chicken Enchiladas | Recipes & Cooking


Hands down, Our house favorite at the moment. I stumbled upon the idea of this on Pinterest a few months ago and it took a few times to finally get it JUST RIGHT for us. There were several variations out there but we had to tweak even out favorites and came up with this.  We have used this as a freezer meal by filling the tortillas and freezing them then, making the sauce before serving. We don't find this to save us a great deal of time but we do recommend cooking a large amount of chicken ahead and freezing just like in my freezer video HERE or using a precooked chicken option. So these are Cheesy,Creamy, and STUFFED to the max with chicken! Moved over bland enchiladas! Find the recipes below but be sure to watch the video for helpful tips!
Recipes
 Mexican Restaurant Rice
4 servings
Boil 2 cups water, add 2 tsp of tomato bullion then add 2 cups minute rice. Remove from heat. Let sit for 5-10 min. covered. Double as needed. Add sauteed onion for more flavor.

Stuffed White Chicken Enchiladas
Ingredients
  • 4 cups Chicken, Cooked & Shredded or cubed.
  • 4 cups shredded Monterey Jack cheese
  • 2 tsp Tomato Bullion
  • 3 TBSP Butter
  • 3 TBSP Flour
  • 2 cups Chicken Broth
  • 1 cup Sour Cream
  • 10 Flour Tortillas
  • 1 can (4oz) Diced Green Chilies
Instructions
1. Preheat oven to 350 degrees. Grease a 9x13 pan2. Mix chicken, tomato bullion, salt and pepper to taste and 2 cups cheese. Roll up in tortillas and place in pan.3. In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. 4. Stir in sour cream and chilies. Remove from heat, you don't want curdled sour cream.5. Pour over enchiladas and top with remaining cheese.6. Bake 20 min and then under high broil for 1-3 min to brown the cheese.

Cave Art For Mystery Of History - Plus DIY Stencils Freebie | Homeschool


We are having such a blast learning with Mystery Of History. This past week we did Cave Art while studying The Ice Age and Dinosaurs. Dollar Tree Haul & Library Trip For Mystery Of History Week 2 (Volume 1)

We are pushing through Mystery Of History and the kids and I are loving everything about it. My oldest was saved year before last and this curriculum has helped him grow as a young Christian so much already. I have been using my handy planner I had made a few weeks ago As well as putting my NC Cardinal Card (More info in another post to come) to use finding some really cool helpful books my local library doesn't carry! We have another freebie coming up which features our Cave Art Tutorial and Printable, So watch out for that!   If you follow me on Instagram I'll be sharing our crafts and daily photos as we go through them. I plan to do a "Look At Our Week" at the end of each week which will showcase what we got done the following week!

Our Trip To The NC ZOO | Day In The Life


We had a blast this past Friday at our states zoo in Asheboro NC.  If your not aware NC homeschoolers can get in FREE at the Asheboro Zoo. This includes all students and one teacher. Definatly made the trip easier on the wallet. You do need to plan ahead and reserve your day 15 days ahead of time. It was a cool fall day but I did end up with a touch of sunburn, the kids were fine of course! We took a picnic lunch and enjoyed it lakeside after seeing North America then drove to Africa side to end the day. We made a quick video of our trip as well as plenty of photos check em out!
